PMY (Papa, Maíz, Yuca). Named after the foundational ingredients of the chefs’ native countries potatoes, corn and yucca, the food and hospitality represent the fraternal diversity of culinary and historical influences of these three countries as expressed through the dishes of everyday life in Latin America.
